Mango Tango – Grilled Shrimp Skewers

A refreshing take on shish kebobs, this combination of fresh fruit and seafood will spice up your next barbeque with zero hidden ingredients.

Grilled Shrimp & Pineapple Skewers in Mango Marinade

(makes 6 skewers)

  • 1 lb (about 18) shrimp, peeled and deveined
  • 18 pineapple chunks
  • 1/2 lemon, juiced
  • 6 skewers

Directions

Rinse and place shrimp in a medium-sized bowl.

Follow instructions for Mango Marinade.

Place three pineapple chunks and three pieces of shrimp, alternating each, on a skewer. Repeat until all skewers and ingredients are used.

Grill for three minutes on each side or until shrimp turns pink.

Serve hot.

Mango Marinade

  • 1 ripe mango, peeled, pitted, and chopped
  • 1 tablespoon coconut oil
  • 1 orange, juiced
  • 2 teaspoons finely diced and peeled fresh ginger root
  • 3/4 teaspoon fine sea salt
  • 1/4 teaspoon coconut flakes

Combine all ingredients in a food processor or blender. Pour over shrimp and let sit one hour.
