Sicilian Beef Loaf
Sicily . . . the Galapagos Island of food. From juicy lemons to sweet dates, incredible pistachios, luscious pomegranates, ocean delicacies, and world renowned cherry tomatoes comes the simple yet hearty dish that reflects the history and influence of this magnificent island!
You could purchase ground beef, but I like to choose my own selection, and most butchers are willing to accommodate. Combine, chuck, untrimmed brisket for fat and even a little sirloin for a nice rich mix.
Serves 4 (with leftovers)
Ingredients:
2lbs mixed minced beef
¼ cup bread crumbs or chick pea flour
¼ cup pine nuts
¼ cup currants
2 cloves garlic, minced
¼ cup grated parmigiano cheese
1/3 cup olive oil
1 handful of fresh marjoram
Salt to taste
6 plum tomatoes, halved
Method for beef loaf:
Heat the oven to 375 degrees. Place the minced beef in a large bowl. Add breadcrumbs, olive oil, garlic, marjoram, currants, pine nuts, cheese, and salt. Knead until the mixture is firm enough to roll into a loaf. Bake for 20-25 minutes. Baste with juices until the loaf looks rippled with varying textures of brown.
Note: To test the salt and seasoning, make a small ½ inch patty and fry in non stick pan.
Method for roasted tomatoes:
In heated oven, place the cut tomatoes on a non-stick baking pan. Drizzle with olive oil and a little salt and minced garlic. Roast until cooked but still a little firm. When serving, arrange the roasted tomatoes around the beef loaf and sprinkle with fresh marjoram.
