Benefits of Grassfed Beef

It is not enough to eat a diet high in protein, but what matters most is being educated and focused on the origin of that protein. Eating clean starts long before the food hits your table. It starts in the treatment and diet of the animals you consume. Grassfed beef is a quintessential source of nutrition in leading a Paleo lifestyle. Grassfed beef carries a higher nutritional value, due to the humane treatment of the cows from day one, and a diet consisting of this choice of meat will result in delicious, sustainable protein for the whole family without the risks associated with grain-fed beef. Look for beef with higher fat content and eat local when possible.

Grassfed Beef Stew
Makes 4-6 Servings

Ingredients:

1-2 lbs of grass-fed stewing beef
½ cup of coconut oil for browning beef
8-10 garlic cloves – halved
¼ cup coconut flour
½ vidalia onion – thinly sliced
10-12 white mushrooms, sliced
1 cup of boiling water
4 cups of broth (beef, chicken or vegetable)
4 large carrots – peeled and chopped
2 sweet potatoes – peeled and chopped
1 parsnip – peeled and chopped
2 stalks of celery – chopped
4 sprigs of fresh thyme
sea salt and fresh ground pepper to taste

Directions:

Stage 1
Begin by placing your two pounds of grass-fed stewing beef on parchment paper
Sprinkle coconut flour on beef and coat completely.
In one large pot, add coconut oil and bring to medium/high heat.
In batches, cook your beef for 2-3 minutes until all sides are browned. Do not over cook, the cooking process
continues later.
When all beef has been browned, set aside and rinse large pot.

Stage 2
Add 2 cups of broth and 1 cup of water to pot, place the beef back in and bring to a boil.
Reduce heat and simmer on low for two hours.

Stage 3
Chop/slice and prepare all vegetables: mushrooms, carrots, parsnips, celery, sweet potatoes and onions.
In a second large pot, add remaining two cups of broth, two cups of water, all vegetables, garlic, salt, pepper, and
thyme and bring to a boil.
Reduce heat and simmer for one hour or until all the vegetables have softened.

Stage 4
When the beef has simmered for two hours and the vegetables have cooked for one hour, pour all contents of
vegetable pot into beef pot, including liquids.
Let this mixture stew for an additional 15 minutes, add addition salt and pepper to taste.
Serve hot.
