Bite-Sized Snacks: Chocolate Covered Caramels

These bite-sized caramels are the perfect alternative to candy during the winter season. They can be made into balls, squares, or bars. With a bake-free cooking method, they’re perfect for any time of day, whatever the occasion.

Ingredients:
6 large medjool dates, pitted and chopped
1 tbs sunbutter
½ tsp sea salt
½ cup of dark chocolate, 60-80% cacao
1 tsp coconut oil
2 tbs coconut flakes

Instructions:
Begin by mixing the softened medjool dates in a food processor until smooth.
Add the sunbutter and sea salt and process until a caramel consistency forms.
Place the bowl of caramel in the freezer for five minutes; then remove and cut into squares or roll into balls. Freeze for an additional ten minutes.
Over low heat, stir the dark chocolate and coconut oil until melted. Dip the caramels into chocolate and place on a parchment-lined plate. Sprinkle immediately with coconut flakes and serve cold. Store in the fridge or freezer.
