The Dish That Offers All of Autumn’s Freshest Flavours

Winter is the perfect time to take advantage of some incredible seasonal ingredients using the freshest fare to create flavours that will keep you warm on those cold nights. This dish is fantastic as a vegan main course or as a stunning side dish at any table. Simple and healthy ingredients make this quick and easy dish come together in no time and will WOW guests at your table.

Winter Stuffed Acorn Squash

Servings: 6 entrées / 12 sides
Total Time: 35 minutes

  • 3 acorn squash
  • 1 tsp coconut oil
  • 1 red onion, diced
  • 1 head cauliflower, grated
  • ¼ cup water
  • 1 cup dried cranberries
  • 1 granny smith apple, diced
  • 3 sprigs fresh thyme
  • 1 tsp cinnamon
  • 1 tsppaprika
  • Salt and pepper to taste
  • Pepitas for garnish
  1. Cut acorn squash in half and remove the seeds;roast in a 425-degree oven for 20 minutes.
  2. Dice onions and apples, and then place in a sauté pan on medium-high heat with coconut oil. Once the onions are translucent, add garlic, thyme, and seasonings.
  3. Grate cauliflower and add to sauté pan along with water. Cover and steam for 5 minutes.
  4. Stuff acorn squash with cauliflower rice, bake for 10 more minutes, and garnish with pepitas.
